1. In a food processor, combine all cookie ingredients and blend until ball forms.
2. Separate dough into 2 balls and roll out each, one at a time, between 2 sheets of wax paper until 1/8 - 1/4 inch thick. The thinner the dough, the crispier the cookie.
3. Using a 1 1/2 inch round cookie cutter, cut dough and place on a parchment lined baking sheet.Continue to combine and roll all dough until gone.NOTE: If the dough starts sticking to the wax paper, get fresh paper. You may need to change with every rolling.
4. Bake at 350° for 10-12 minutes, or until firm and slightly browned. Allow to cool completely.

2. Combine all the cookie ingredients in a bowl. Stir to form a dough. Freeze your dough for about 5-10 minutes as it makes it much easier to roll out and cut.
3. Once frozen roll out the dough about 1/4 inch thick. Cut dough into circles with a cookie cutter or small jar lid. I found the shape of a champagne glass turned upside down was perfect.
4. Bake 7 minutes. As they cool they will firm up. Cool for 10 minutes and then freeze the cookies while you make the coating. This helps the coating stick.
