In a skillet melt 2 tablespoons butter on medium to medium high heat. Add the chicken and season with salt and pepper. Let that cook for 8-10 minutes. While, the chicken cooks, wash and chop the mushrooms and zucchini. Then, add the shrimp to one side of the pan with the chicken. Sear both sides and season with a dash of salt and lemon pepper. Remove the chicken and shrimp from the skillet and set aside.
2. In the same skillet melt 1 tablespoon butter. Add in mushrooms and zucchini. Season with salt and pepper. Cook until tender, about 5-7 minutes. Remove vegetables from skillet and set aside. Add the chicken and shrimp back to the hot skillet. Toss in hoisin, soy, and teriyaki sauce. Also, ground ginger and garlic. Let sauce thicken for 3-5 minutes. Remove from heat.
3. In a wok or a big deep pot melt 1 tablespoon butter on medium heat. Add two eggs and scramble until fully cooked. Remove eggs from the wok and add 1 more tablespoon of butter. Then add chopped carrots or frozen mixed vegetables. Sauté for about 3 minutes. Add rice, eggs, soy sauce, and black pepper. Mix and incorporate all the ingredients. Cook until the rice has fully heated through, about 5-6 minutes
4. Serve hot!
