One recipe is a butterscotch and peanut butter base and the other is a butterscotch and chocolate base. Haystack Cookies are a no bake cookie that’s made using crunchy chow mein noodles, a variety of chocolate chips (butterscotch morsels, semi-sweet chocolate chips, or white chocolate chips), and peanut butter.
Add 6oz chow mein noodles. Add 1 cup mini marshmallows and stir. Using two large spoons, scoop and place on tray lined with parchment paper. Melt 1 oz of white chocolate and drizzle on top of haystacks with a fork. Place in refrigerator for at least one hour to cool completely.
