1. Pour milk and water (or just water) in a pyrex cup and heat in the microwave for 3 minutes. If using saffron, add it to the mix. Alternatively, heat it on the stove in a sauce pan. Keep aside for later.
2. Heat a wide sauce pan or deep skillet on medium-low heat. Add ghee (or butter), and wait for it to melt, about 20-30 seconds. If using nuts and raisins, add them and saute for 1 minute. Add Suji and roast while stirring for 6-8 minutes. If adding almond flour, add it along with suji. Roast it until the color darkens a little and you can smell the aroma of suji.
3. Carefully and slowly add the warm milk and water mix, and stir continuously with a whisk or wooden spoon to prevent any lumps from forming.
4. When the liquid is reduced in half (about 1-2 minutes), add sugar and stir till it reaches a thick pudding-like consistency. If you like your halwa more dry, continue to cook for another 1-2 minutes until it looks like soft dough. The halwa is ready when it stops sticking to the pan. Turn off the heat and stir in cardamom powder. Serve warm or cold.

1. Get started: Rinse pumpkin and cut in half. Cut one side in half again (you’ll use nearly a quarter pumpkin). Spoon out the insides (pulp and seeds) in one quarter section and cut off or peel the outer skin. Grate the remaining core into 2 cups (roughly 200 grams or 7 ounces).
2. Make the halwa: In a large skillet, heat ghee on medium heat and add grated pumpkin. Cook for roughly 5 or 6 minutes until no longer raw and pumpkin darkens in color. Add heavy cream and cook until absorbed. Add sweetener and stir to combine. Stir in a pinch of cardamom. Remove from heat.
3. Finish and serve: Serve in small dessert cups and top with roasted slivered almonds. You may also serve with sugar-free whipping cream or sugar-free ice cream if desired.
