1. To a large Dutch oven, add the ground beef, onion, and cook over medium-high heat for about 7 minutes, or until beef is cooked through and onions are lightly caramelized. Break up the ground beef as it cooks and stir the onions frequently. If your beef is fattier than mine or there’s excess oil/water, drain it before proceeding; I didn’t need to.
2. Add the taco seasoning, water (note this is less water than the packet calls for), and stir to combine.
3. Add the Ro-Tel and stir to combine.
4. Reduce the heat to medium-low, add the Velveeta, and cover to encourage cheese to melt. Stir every minute or so until cheese has melted.

1. Heat oil in a large non stick skillet over medium high heat. Add ground beef, all purpose seasoning, chili powder, cumin, oregano, red pepper flakes, and salt and pepper and cook until beef is no longer pink and cooked through. Transfer cooked meat to a plate and drain off any excess grease.
2. Add cubed velveeta, diced tomatoes, diced green chiles, and salsa verde to the skillet. Heat over medium heat stirring constantly until velveeta is melted and combined with other ingredients. Add Monterey Jack cheese and stir until cheese is melted and well combined.
3. Return cooked ground beef to skillet and mix into queso. Top with chopped cilantro.
4. Serve immediately.
