When you have a pork tenderloin you do NOT need to tenderize it with a lot of acids to break up tough fibers. Like Karlynn mentioned in her very popular Steak Marinade Recipe, acid can actually toughen up meat if you leave it too long! I have lime juice for flavour in this marinade, not for tenderizing purposes.
For medium-rare beef tenderloin, grill until beef reaches an internal temperature of 135°F or 145°F for medium. Let the beef rest for 10 minutes before slicing. Serve, and enjoy! Always let your beef reach room temperature before you grill it. It will cook more evenly throughout this way. Use a meat thermometer for best results.
Use the full marinating time for your Keto Beef Kabobs listed in the recipe. If you only marinade the beef for a short time it won’t taste of much of anything. Don’t forget to turn the bag in the fridge halfway so that the meat is evenly marinated.
