A warming but light curry filled with tasty prawns, hot chilli and super delicious. A great main meal for anyone, including those following a low carb/keto diet. Add half of the ghee on high heat in a large pan. Add the king prawns and cook for around 1 minute until all prawns have turned pink. Then remove the shrimp from the pan.
Add in the coconut milk, stir until well combined. Add broccoli and cauliflower and simmer until tender. Re-add the prawns, ground almonds and sliced red chilli, stir and allow to heat through for 1-minutes. Serve and garnish with coriander and chilli peppers, if desired. This is a loose curry so it's best served in a bowl rather than on a plate.
Heat up a small pot on high heat and add the cooking oil. When it's heated, saute the green curry paste for 10 seconds before adding the water. Bring the water to boil and add the shrimps.
My carb calculations already have the dietary fibre taken off the carbohydrate amount. If you want to reduce the carbs further then look at removing some of the onion, using fresh tomatoes rather than tinned and/or less cauliflower and broccoli. You could even have cauliflower rice instead of putting it in the curry itself.
