DirectionsStep1In a large mixing bowl, whisk the egg, Greek yogurt, lime juice, vanilla extract, and sweetener until smooth.Step2Add oat flour, salt, and baking powder. Using a silicone spatula, stir to combine ingredients together. The cookie dough should be moist, sticky but not liquid.Step3Fold in the lime zest and stir to incorporate. Set aside for 10 minutes at room temperature.Step4Meanwhile, preheat the oven to 350°F (180°C). Line a large cookie sheet with parchment paper. Lightly oil with cooking spray. Set aside.Step5Check the cookie dough. If too wet, add an extra 2-3 tablespoons of oat flour and stir to incorporate.Step6Use a cookie dough scoop to scoop 1 1/2 tablespoons. The dough is very sticky and soft, so I recommend lightly wetting your hands to help release the dough on the sheet. You can roll the dough in a ball bet…Step7Lightly press the top of each cookie with oiled or wet fingers to flatten them.Step8Bake the cookies for 15-18 minutes at 350°F (180°C) or until lightly golden brown on the sides.Step9Cool the cookies for 5 minutes on the baking sheet before transferring them to the wire rack to cool completely.Step10In a small mixing bowl, whisk the Greek yogurt, lime juice, and sugar-free powdered sugar.Step11Add a teaspoon on top of each cookie. Then add a pinch of lemon zest and shredded coconut.Step12Store in an airtight container in the fridge for up to 4 days. The frosting stays soft, so don't stack the cookies. The frosting hardens lightly in the fridge after a few days. You can freeze them in zip-lock bags for up to one …IngredientsIngredients1 Large Egg⅓ cupGranulated Sweetener (coconut sugar or sugar-free erythritol/allulose)1 ¾ cupsOat Flour (lightly packed, swept)1.08 cupsGreek Yogurt1 teaspoonLime Zest1 tablespoonLime Juice1 teaspoonVanilla Extract¼ teaspoonSalt1 teaspoonBaking Powder1 tablespoonLemon Juice½ cupPowdered Erythritol (or icing sugar)See moreNutritionalNutritional87 Calories2.2 gTotal Fat15 mgCholesterol24 gCarbohydrate94 mgSodium4.7 gProteinFrom sweetashoney.coRecipeDirectionsIngredientsNutritionalExplore furtherGreek Yogurt Chocolate Chip Cookies - Baker by Naturebakerbynature.com10 Best Greek Yogurt Cookies Recipes Yummlyyummly.comHealthy Greek Yogurt Brownies - JoyFoodSunshinejoyfoodsunshine.comGreek Yogurt Brownies (100 calories!) - The Big Man's Worldthebigmansworld.comGreek Yogurt Chocolate Chip Cookies - Bake or Breakbakeorbreak.comRecommended to you based on what's popular • Feedback

    1. In a large mixing bowl beat butter & Greek yogurt with an electric mixer on medium for about 30 seconds. Add 1 1/2 cups of confectioners sugar, baking powder, and salt. Beat to combine. Add eggs and orange peel. Beat to combine all. Add flour and mix until a soft dough forms.
    2. Cover and chill dough for about 1 hour.
    3. Roll out the dough about 1/4 inch thick. Using your larger cookie cutter, cut out as many shapes as you can. Using the smaller cookie cutter, cut out the center of half of your batch for the tops of your cookies.
    4. Preheat oven to 375 degrees F. Prepare a baking sheet lined with parchment paper. Bake 10-12 minutes for the large shapes and 7 minutes for the tops/cut out parts and the small shapes. Cool on the cookie sheet for about 1 minute before transferring to a wire rack to finish cooling.

    1. Add water and cinnamon sticks to a small saucepan and bring to a rapid boil, over medium heat. Once the water has reduced by about ½ remove from heat. It's better to boil off too much water than not enough, you want the flavor of the cinnamon to shine through. If you do boil too much off, simply add cool water to bring to ½ a cup. Cool completely!
    2. Using a mixer, fitted with a paddle attachment, cream the soft butter, vanilla and cane sugar mixing until smooth and combined on low. You don't want any chunks of butter remaining.
    3. Whisk together in a large separate bowl; cake flour, all-purpose flour and baking powder.
    4. With the mixer on low, add eggs to the butter mixture, then add the flour mixture alternating with a little of the cooled cinnamon water until it comes together and forms a soft, smooth dough. Preheat oven to 375°F and line a couple of baking sheets with parchment paper.

    1. Preheat oven to 375 degrees. Line baking sheets with parchment paper or baking mats; set aside.
    2. In a stand up mixer fitted with paddle attachment, beat together the butter and sugar on medium speed for 5 minutes. Add in the eggs, vanilla, and almond extract, and mix to combine, scrapping down sides of bowl with a rubber spatula. Add the flour and mix on slow until just combined.
    3. Use a cookie scoop to measure out equal portions of cookies and place on baking sheet leaving about an inch and a half between each cookie. You can either bake as is or roll into balls.
    4. Bake for 12-14 minutes until dough is just set. The cookie will not brown much and will remain a light color. Let cool on cookie sheet for 5 minutes before removing to a wire rack and cooling completely.
