1. Pour the warm water (between 95-115 degrees) in a stand mixer bowl. Sprinkle the yeast on top of the water and wait about 5 minutes for the yeast to activate. Then add the rest of the ingredients to the mixing bowl. With the paddle attachment, mix the ingredients until they are just combined and completely moistened. Then take off the paddle attachment and replace it with the dough hook. Knead the bread on medium speed for about 5-7 minutes.
2. Place the dough in a greased bowl and cover it with plastic wrap. Let it rise in a warm space for about 30 minutes or until doubled in size. Punch the dough down.
3. Take the dough ball, form it into a loaf and put it in a greased loaf pan (I use a 9"x5" size). and let it rise again for about another 25 minutes.
4. Bake at 375 for 35-40 minutes or until golden brown. Allow the bread to cool in the pan for 10 minutes, then move to a wire rack to cool completely.

1. In a large bowl, combine 1 1/2 tablespoons of sugar and water. Sprinkle yeast over top of the mixture and allow it to sit for 10 minutes and foamy.
2. The yeast puffs up and covers the surface of the water. If your yeast doesn't foam up within ten minutes you might need to use slightly cooler water or get some fresh yeast.
3. My grandmother always said that as a general rule run tap water on top of the underside of your wrist or forearm until you can just tolerate the heat. That is when you grab your large measuring cup, whatever heat resistant bowl you are using and add your water, sugar and then yeast.
4. Stir in 2 3/4 cups of the flour until incorporated. Cover with a warm damp cloth and place in a warm area for 45 minutes. My grandmother always left the bread in front of the window with the sun shining on it. This bread needs to rise in a warm area or it will not rise properly.
