2. Add the GF flour, and mix until well combined in one mass. Cover the dough and set aside while you prepare your filling.
3. Divide the dough into 4 pieces. Sprinkle some of your GF flour on the work surface and roll out the dough one piece at a time. Roll to a thickness of 1/8 – 1/4 inch. Cut into 3-inch circles. Add a small amount of the filling to each circle. Fold the circle in half around the dough and crimp the edges to seal.
4. The dough will crack as you do this. Simply smooth out the cracks and carry on. Set the pierogi so that they’re not touching and continue to repeat the process with all 4 pieces. You can re-roll the scraps if you have enough filling for them.

Total Time: 1 hr 15 mins1. In a large-bottomed bowl, whisk together the gfJules™ All Purpose Gluten Free Flour and salt. Whisk together with a fork.
2. Form a well in the center and pour the oil and cracked egg (or substitute) into the well.
3. Whisk these together without incorporating much flour, until well mixed. Add the sour cream to the well next, whisking to integrate.
4. Gradually begin stirring the flour in with the wet mixture in the center. Meanwhile, pour 1/8 cup of water on top of the dry ingredients and stir that in as well. As the dough gets too dry, add in the additional 1/8 cup water; add more water as needed to get the dough wet enough to hold together well in a ball. Continue stirring with the fork until all the liquid is completely integrated. The dough should hold together without being overly wet and sticky.
