2. In a large bowl, combine both flours and toss to combine. Add oil, honey or syrup, and orange juice to the bowl and mix with a hand held blender or by hand until the mixture is well incorporated and resembles the consistency in the picture below.
3. Drain figs and place all ingredients in a food processor or high-speed blender. Process until almost smooth, but still slightly chunky.

2. Add all ingredients for cookie into a food processor and process until a dough forms. Remove the dough from the food processor and set it in the fridge to chill while you make your fig filling.
3. Add all ingredients for the filling into the food processor (make sure you remove the hard knob piece at the top of the fig stem) and process until a well-combined paste like substance forms. Basically, when you feel like you wouldn’t mind eating it.
4. Spray a large piece of parchment paper with cooking spray and place HALF the dough on top of it. You are now going to fold over the parchment paper from straight end to straight end (not from ripped end to ripped end, God I hope that makes sense). I have Costco parchment paper so it’s 15 inches across when I folded it over it was 7 inches across which is perfect because you want to roll out the dough to be about 5-6inches by 8-10 inches. Alternatively, you can use two pieces of parchment paper on top of each other, but the dough is too sticky to roll the dough out directly with your rolling pin. Plus, if you are using a wine bottle because you don’t have a rolling pin, then that’s even trickier ;) You’ll need to trim the edges so you have a flat piece as shown in the picture above.

In bowl of stand mixer fitted with paddle attachment, beat together vegetable shortening, granulated sugar, and brown sugar at medium-high speed until well combined, about 30 seconds. Add eggs, one at a time, and mix at medium speed for 30 seconds. Scrape down sides of bowl, then mix for an additional 15 seconds. With mixer off, add dry ingredients and orange oil, then mix at medium-low speed until a dough forms.
2. Generously dust work surface with brown rice flour. Turn dough out onto counter and pat into a round. Wrap with plastic wrap and refrigerate for at least two hours or overnight.
3. Meanwhile, For the Filling: In bowl of food processor, combine figs, water, corn syrup, lemon juice, and salt. Pulse until a thick paste forms. Filling should be thick but yield when pressed with the back of a spoon. If filling is too firm, blend in an additional teaspoon or two of water until it is soft enough to pipe. Transfer filling to a large pastry big fitted with a 1/2-inch round tip.
4. Preheat oven to 350°F. Remove dough from the refrigerator and cut into six equal pieces. Line a rimmed baking sheet with parchment paper. Set a 12- by 18-inch piece of parchment paper on your work surface. Dust the parchment generously with brown rice flour. Center one of the dough pieces on the parchment and dust generously with brown rice flour. Roll dough into a 10- by 4 1/2-inch strip, using a pizza wheel to trim edges.
