1. Preheat the oven to 300 degrees Fahrenheit. Cut the tomatoes in half and place on lipped baking sheet, cut side facing up. Lightly brush the cut sides with the olive oil, and then sprinkle them with the salt and pepper.
2. Mix together the minced garlic, 2 tablespoons of the olive oil, chopped basil, salt, and black pepper in a small bowl. Allow the mixture to infuse for 15 minutes. In a large bowl, toss the shrimp with the garlic mixture and allow to infuse in the refrigerator for another 15 minutes.
3. Rub the toasted baguette slices with the cut half of the raw garlic, then evenly distribute the shrimp, roasted cherry tomatoes, small basil leaves, and parmesan cheese. Serve immediately. Makes about 16 bruschetta.

4. Transfer the shrimp bruschetta into a serving bowl. Cover and refrigerate for 1 hr. When ready to serve, toss the bruschetta gently to freshen. Toast the bread slices and serve next to it. Enjoy!
