1. Combine cream, milk, ⅓ cup (67g) sugar, vanilla bean, and salt in a medium-sized heavy bottomed saucepan. Place on stovetop over medium heat. Stir frequently until sugar is dissolved and mixture comes to a simmer. Remove from heat and allow to cool for 10 minutes (stir occasionally).
2. Meanwhile, in a separate large bowl, whisk together egg yolks and 3 Tablespoons of sugar. Whisk vigorously for about 15 seconds, until sugar is beginning to dissolve.
3. Sprinkle cornstarch over egg/sugar mixture and whisk until combined and slightly thickened.
4. Once your cream mixture has cooled, slowly drizzle about ⅓ cup of the cream mixture into the egg mixture while whisking constantly (this will temper your eggs and gradually adding the heated cream will prevent them from cooking!). Slowly, while still whisking, drizzle in the remainder of your cream mixture until the cream and egg mixture are completely combined.

1. Put the milk and half of the sugar in a saucepan and bring to a boil at med-high heat.
2. While the saucepan is on the stove, mix half of sugar and cornstarch/flour very well in a heat proof mixing bowl and then add the eggs and mix until the mixture is smooth. There should be no lumps in the mixture.
3. When the milk and sugar bring to a boil, immediately remove the saucepan from the heat and temper the eggs: pour almost 1/3 of the milk very slowly to the egg mixture, whisking constantly at the same time to prevent it curdling. Pour the tempered eggs into the milk mixture and whisk at the same time.
4. Add in the vanilla and whisk. Place the saucepan over med-high heat and let the mixture boil for 2 minutes until it is thick and smooth. Take the pan from the heat and pour the pastry cream into a heat proof bowl. Cover the pastry cream with a plastic film, lightly press so plastic film can touch the pastry cream when covered and prevent a skin forming on top.
