1. Place beef shank in a pot. Add water, onion, and peppercorn. Bring to a boil at high temperature.
2. Once it starts to boil, cover the pot with a lid and lower temperature to low. Let the beef cook for 30 minutes to an hour or until it becomes tender. Cut the beef into serving size.
3. Add the potatoes, beans, and corn. Season with salt and fish sauce. Cook covered for another 10 minutes or until the potatoes are cooked.
4. Add the spring onions and cabbage and then turn off the heat. Cover with lid and let the vegetables cook for 2-3 minutes.

3. Lower heat to low, cover and cook at a bare simmer for about 3 hours or until meat is fork tender.
4. Add corn and simmer for 20 minutes or until corn is tender. Season with salt to taste. Add the pechay and green onions and cook for about 2 to 3 minutes or until vegetables are tender yet crisp. Serve hot with fish sauce and calamansi.
