Mechado. Mechado in general is a tomato based stew. Meats such as pork and beef are used to make this dish. The meat is cut into 1.5 x 1.5 inch cubes. The other ingredients used to cook mechado are potato, bay leaves, soy sauce, and lemon rind or lemon juice.
Mechado is a braised meat dish usually made from beef round roast. A strip of pork fat is inserted in the center of this lean cut of meat. Filipino mechado recipe basic ingredients are tomato sauce, bay leaf and potatoes and the cooking method is by braising or browning briefly before simmering at a low temperature for hours.
There are other versions of mechado that doesn’t use tomato but I prefer my mechado to have tomato. I just like my beef to have that tomato goodness in it. However, you can choose to remove the tomato.
