1. Line a baking sheet with wax paper or parchment paper. Set aside.
2. In a large, microwave-safe bowl, add almond butter and maple syrup. Whisk together until well mixed.
3. Heat in 20-second increments in the microwave until warm and fragrant, and the mixture begins to dry out and become fluffy (about 4-7 rounds). Whisk in between heating increments. *Stovetop instructions in Notes.
4. Add oats, raisins, and cinnamon, if using, to the almond butter mixture. Stir and fold until thoroughly combined.

1. Heat oven to 350 degrees F (176 C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, stir together almond flour, oats, gluten-free flour, raisins, baking powder, cinnamon, salt, and brown sugar.
3. In a separate bowl, beat aquafaba (using a handheld mixer or by whisking vigorously, which will take much longer) until light and fluffy and loose peaks have formed. (Add 1/8 tsp cream of tartar to help them along if not whipping.)
4. To the aquafaba, add the almond butter and oil and beat or whisk to combine. (The mixture will deflate a little — that's okay). Then add to dry ingredients and mix until combined. You should have a firm, semi-tacky dough (see photo). If not baking immediately, cover and chill in the refrigerator for up to 2-3 days (the cookies will develop a bit more flavor and slightly firmer texture if the dough chills, but chilling this long is not necessary).

3. Use a cookie scoop to place ~2 tablespoon scoops of cookies on the baking sheet about an inch apart. Use wet fingers to gently form and flatten the cookies until they are 1/2 inch thick. (The cookie dough will not stay together well when uncooked so just clump them together with your wet fingers). Optional: If some of the cookies have no raisins showing on top, place a few extra raisins on the tops of the cookies.
4. Bake for 8 minutes until edges are light golden brown. The center of the cookies will still be very soft.
