WebPressure Cook Pinto Beans: Add 2 tbsp (30ml) regular soy sauce, half of the bacon bits, well-drained pinto

Rating: 5/5(33)
Total Time: 1 hr 30 minsCategory: Dinner, Lunch, Side Dish, SoupCalories: 438 per serving1. Render Bacon in Instant Pot: Before you turn on the heat, layer 6 slices of bacon in Instant Pot. *Note: We are using Instant Pot’s preheating heat to render & crisp the bacon. Heat up Instant Pot using “Sauté More” function. Flip bacon occasionally. Once Instant Pot says “HOT” (roughly 12 mins), the bacon should be done. Place bacon on a paper towel to absorb excess fat. If they are not done, brown for a few more minutes.
2. Saute Onion and Jalapeno: Add onion slices and jalapeno in Instant Pot. Cook for 3 ½ minutes. While the onions and jalapeno are sauteing, cut the bacon into bit size.
3. Saute Garlic and Spice: Add 3 bay leaves, ½ tsp ground cumin, ½ tsp dried oregano, and minced garlic in Instant Pot. Cook until fragrant (roughly 1 minute).
4. Deglaze Instant Pot: Pour ½ cup (125ml) unsalted chicken stock in Instant Pot, then deglaze by scrubbing all the flavorful brown bits off the bottom of the pot with a wooden spoon. Give it a quick mix.

Rating: 5/5(2)
Category: Side DishCuisine: AmericanTotal Time: 40 mins1. If you’re soaking the beans (this is optional), place them in a large bowl and cover them with 3-4 inches of cool water. Let sit overnight. Drain and rinse before cooking. Reduce the water to 5 cups.
2. Place the drained beans in the instant pot and add the water (*if you soaked the beans, reduce the water to 5 cups), garlic, shallot, bay leaf, salt and bacon (if using). Lock on the lid and cook on high pressure (“pressure cook mode”) for 35 minutes for un-soaked beans, and 15 minutes for soaked beans. Release the pressure valve and let the steam release. Unlock and carefully remove the lid. Taste a bean—if it’s still slightly chalky re-lock the lid and cook on high pressure for 5-10 minutes longer (see the notes below).
3. Discard the shallot and bay leaf. You can leave the bacon in the pot or remove it as well (same for the garlic—I usually leave it in the beans because it’s so damn delicious). Add the vinegar, and season with additional salt to taste. Let the beans cool in their liquid. Eat the beans just as they are, or check out my serving suggestions above!
