The vital wheat gluten flour itself is quite low in carbs, so as long as you only add low carb ingredients such as soy sauce, spices, tofu or protein powder, the resulting seitan will also be low in carbohydrates.
Vegan “beefy” broth can also be used instead of vegetable broth to further boost the “beefy” flavor. On the other hand, if I want my seitan to be more like chicken, pork or just more neutral, I will use vegan “chicken” flavored broth and herbs such as thyme and sage.
Since seitan is made from wheat, not soy, it can be a good vegan protein option for people with soy allergies or sensitivities. Seitan may be nutritious, but it is still a highly processed food.
