Seitan, aka ‘wheat meat,’ is an excellent protein alternative that works as a blank slate for many flavors. Opt for pre-seasoned, store-bought brands or make your own at home using whole wheat flour or vital wheat gluten. Either way, these seitan recipes are sure to be a hit on your next meatless Monday. 1. Vegan Fajita Bowls
Bring water to a boil in your steamer pot. Put the pieces of seitan dough in the steamer basket on some parchment paper to keep them from sticking. Cover with a lid and steam for 35-40 minutes. Let the seitan cool in the steamer.
Tear off 4 pieces of foil and place piece of dough in the center of the foil. Loosely wrap foil to cover the loaf, leaving a bit of room for expansion. Don't twist the ends and make a severe loaf shape for the seitan you plan on grinding, but you could definitely multitask here and steam some loaves.
There are about five servings in this recipe, so that's 5 g net carbs and 24 g protein per serving. Seitan can be a little temperamental and there is a bit of a learning curve to making it, so don't give up if you don't get a perfect result right away.
