1. Preheat oven to 325 degrees. Coat a 9- or 10-inch tube pan with cooking or baking spray.
2. In a large mixing bowl, beat butter and sugar on medium until well blended, about five minutes. Gradually add egg whites/egg mixture, beating well. (If using 7 egg whites, add them one at a time, beating after each addition.)
3. In a small bowl, whisk sour cream and baking soda together. Measure the flour by lightly spooning it into dry measuring cups and leveling them off with a knife. Keep the flour in a bowl until you are ready to sift. Sift the flour by gradually adding it to a fine-mesh strainer placed over a medium bowl. Combine the sifted flour with salt.
4. Add some of the flour mixture to the butter/sugar mixture, beat, then add some of the sour cream mixture and beat. Continue alternating the flour and sour cream, beating until the batter is mixed, beginning and ending with the flour. Stir in the vanilla and almond extracts (or use all vanilla).

1. Preheat the oven to 350°F. Butter and flour a 9"x5" loaf pan or 12 cup Bundt pan.
2. Combine the eggs, yolks, vanilla and half of the sour cream in a small bowl, whisk to combine and set aside.
3. Sift together the flour, salt and baking powder in a mixing bowl. Add the sugar to the flour and mix at low speed for 30 seconds. Add the butter to the flour and mix until combined. Add the remaining sour cream and increase the speed to medium high. Mix for a full 2-3 minutes. The batter will lighten in color and texture. If using a hand mixer add another minute to the mixing time.
4. Scrape the bowl and beater thoroughly. On low speed, add the egg mixture in 3 increments, scraping the bowl after each addition. Mix just until the eggs are incorporated.
