2. Peel and dice apples into small pieces. Place apples in a skillet over medium heat, add lemon juice, brown sugar, and cinnamon. Bring to a simmer and reduce heat to medium low.
3. Continue cooking a stir periodically until liquid evaporates and apples have softened. You don't want the apple filling to have a lot of moisture. Remove from heat and allow to cool while you prep the dough. You can also make this a couple days in advance and store in the refrigerator until ready to use.
4. Preheat oven to 350 degrees F.
