These low carb empanadas come together in four steps: keto empanada dough, filling, assembly, and frying: Pulse. Pulse almond flour and eggs in a food processor. Melt. The keto empanada dough is a variation of my popular fathead dough, and we fry it to make it golden and crispy. I can’t wait for you to try them out. Ground beef is a great dinner option, as it cooks quickly and can be turned into so many meals!
The beef is first cooked and then placed inside of the empanada before baking it. You could also go without the beef and perhaps, use just cheese or even a ground poultry instead. Because this is basically a pastry, there are some helpful tools that you could use for this recipe.
Use a fork or similar tool to flatten the edges together to keep the filling inside of the empanada while it bakes. When ready to bake, preheat your oven to 375. Whip together the egg and water and then brush it on to the empanadas trying to avoid brushing the mix on the edges. Bake for 15-20 minutes or until lightly browned and rotating halfway.
