Make the chow mein sauce. In a small bowl, combine the remaining 1 tablespoon soy sauce with the oyster sauce, sesame oil, Shaoxing wine, and cornstarch. In a wok or large skillet over high heat, heat peanut oil until shimmering. Add the chicken and stir-fry until cooked through, about 2 minutes.
Chow mein and lo mein are both Chinese-American noodle dishes—the difference between them has to do with how wheat egg noodles are cooked and served. Traditionally chow mein noodles are served crispy and fried, whereas lo mein noodles are served boiled with sauce. The terms are not used consistently, though.
Typically fresh Chow Mein noodles can be found in the fresh isles of your supermarket and the dry in the international isle. This recipe can also be made with just about any meat such as Chinese pork, beef or shrimp. OR make it vegetarian, which is also fantastic too!
To the classic Americanized chicken chow mein lovers out there, this one’s for you. These Chinese wide egg noodles were the closest thing I could find in our local Asian grocery store to the fresh noodles we used to fry in the restaurant years ago. The noodles were generally wider and without any color, but these worked out just fine.
