1. Beat the softened butter and sugar together until light and fluffy. Beat in the honey and molasses, scraping down the sides of the bowl. Beat in the eggs, one at a time, and scrape the bowl well, making sure to incorporate all the butter from the bottom of the bowl as well as the sides.
2. Blend in all the spices, and then the baking soda and salt. Finally fold in the flour and mix just until combined and no streaks of flour remain ~ don't over mix.
3. Cover the dough and chill for at least 2 hours, or overnight.

5. In a small bowl, combine the flour, baking soda, salt, Lebkuchengewuerz, white pepper and almond meal. Set aside.
6. Combine the brown sugar, honey, butter, and cream in a medium saucepan and heat, stirring frequently, until melted and the sugar is dissolved. Remove from heat and let sit 5 minutes. Stir in the flour mixture. Once incorporated stir in the egg until thoroughly combined. The dough will have a nice glossy sheen. It will be very sticky and that's how it should be.
7. Turn the mixture out onto some plastic wrap and wrap the dough tightly. Refrigerate overnight or for up to two days.
8. Preheat the oven to 350 degrees.
