    1. Add oats to a food processor and pulse until partially ground. In a mixing bowl, mix together oats, flour, whole wheat flour, baking powder, baking soda, salt, cinnamon and nutmeg until well combined.
    2. Using a stand mixer and paddle attachment, whip butter and sugars until pale and fluffy (about 3 minutes). Add eggs one at a time until incorporated. With mixer on low, add vanilla and then gradually add the dry ingredients and mix until just combined, scraping bowl as needed. Place dough in fridge for at least 3 hours or up to 24 hours.
    3. When ready to bake, preheat oven to 350°F.
    4. Scoop dough by heaping tablespoons and roll (roughly) into a ball. Place on a parchment or silpat lined baking sheet and bake for 11-12 minutes. Cool on baking sheet for a few minutes before moving to a wire rack to cool completely.
