1. In a large bowl, mix together the oats, chocolate chips, and coconut.
2. Add the peanut butter, honey, and vanilla. Mix well until evenly combined. I prefer to use my stand mixer or a hand mixer for this–stirring by hand never seems to incorporate all of the ingredients well enough for me.
3. Chill mixture in the refrigerator for an hour, then roll out balls about an inch in diameter. Keeping the mixture in the fridge before rolling helps them to roll easier.
4. Store in an airtight container–I prefer the refrigerator!

1. Grind. Using a high-velocity blender (see notes for the Blender I use) or food processor, turn the 1 cup almond flour and 1 cup pitted dates into a fine flour. Transfer to a large mixing bowl.
2. Stir Everything Together. Stir in 1/4 cup unsweetened shredded coconut, 1/2 cup vanilla whey protein powder, 1/3 cup melted the coconut oil (I melted it in the microwave for 40 seconds, make sure it is warm, not hot), juice of 1 lemon, and the zest of a lemon, until it forms a hard ball.
3. Roll Into Balls. Roll into 14 balls using your hands. I used a 1/8 cup scoop to make sure every ball was the same size. You may also use a tablespoon (2 tbsp per ball).
4. Roll into More Shredded Coconut. Pour some more shredded unsweetened coconut into a large plate, then proceed to roll each ball into it.

1. Add nut butter, pitted dates, hemp seeds, chia seeds, and protein powder to a food processor and blend until all ingredients are well combined and a cookie dough-like texture forms (see photo).
2. If too wet, add more dry ingredients of choice, such as protein powder or hemp seeds. If too crumbly or dry, add a little more nut butter. NOTE: These are meant to be on the tender side, so don't be concerned if they're a little soft (they'll firm up in the refrigerator or freezer).
3. Taste and adjust flavor as needed, adding more protein powder of choice for flavor or more dates for sweetness (if adding more dates, chop first to encourage even blending). Mix again until well combined.
4. Scoop out rounded 1 Tbsp amounts and roll into balls (as recipe is written, ~20 // we love this scoop). Place on a parchment-lined plate or platter.
