  1. Dried Apricots – you can use any type of dried apricots for this recipe. You can also use a mixture of apricots and sultanas if you wish.
  2. Coconut – I prefer to use desiccated coconut for this recipe, shredded or flaked coconut will not combine as well with the apricots when blitzing the ingredients together.
  3. Honey – you can also use rice malt syrup or maple syrup if you prefer.

    3. Check that the mixture is sufficiently moist to be able to roll into balls. If not, add a little water and blend again.
    4. Take about a teaspoon of mixture, and roll into small bowls and toss in the coconut.
