Add asafoetida and cumin seeds to it. Once the cumin seeds start to splutter, add the turmeric, bay leaf, red chilli powder and ginger paste. Mix the ingredients well.
2. Now add the cubed potatoes and keep stirring. Once the potatoes are lightly fried, add the cauliflower florets. Mix and add salt and tomatoes. Cover and cook on medium flame for about 5-6 minutes. The tomatoes will add a tangy flavour to this curry recipe.
3. Add cumin powder and mix well. Make sure that the curry doesnt get too thick. If required, add a dash of water, cover and cook for 5 minutes, on high flame. Now add the coriander power. Mix and adjust salt as per your taste. Check that the cauliflower and potatoes are cooked well.
4. Add a dash of garam masala powder and turn off the heat. Transfer the aloo gobi curry in a serving bowl and garnish generously with coriander leaves. Serve the delicious North Indian recipe steaming hot with steamed white rice and fried papads.

3. Add the potatoes, cauliflower, and green chili pepper. Stir-fry for about 4-5 minutes.
4. Turn the heat down to low-medium, cover, and let cook for about 20 minutes, stirring once or twice in between.*
