2. Bring 2 cups of water to a boil. Place the dates and baking soda in a medium bowl. Pour the boiling water over the top and allow to cool. You can speed up the cooling process by placing the bowl in the refrigerator.
3. Meanwhile, in a large bowl, whisk together the melted butter, sugar, eggs, vanilla, and salt.
4. When cool, pour the water and dates into the sugar and egg mixture. Whisk to combine.

1. Do not chop your dates too small or they will break up in the batter. I like to cut each dried date into only 4 or 5 pieces so that you can see actual pieces of date in the loaf when you cut it.
2. Pour the hot tea or coffee over the chopped dates along with the melted butter, salt, baking soda and brown sugar. Stir gently with a rubber spatula to help dissolve the brown sugar.
3. Set aside to cool for 20 minutes.
4. After the date mixture has cooled stir in the vanilla extract.
