1. Sweat the cabbage and onion down in the oil over a gentle heat for around 15 minutes or so, until the cabbage is cooked through. If it starts catching at all splash a little water in to loosen it up again.
2. Add the rest of the ingredients, stir well and let cook for 5 more minutes.
3. Set up a little bowl of water and a damp tea towel over your wonton wrappers to prevent them from drying out as you work.
4. Taste your cabbage mixture, and make sure it works for you. If you want it hotter, add more chilli. If it's lacking in flavour add a dash more fish sauce or even soy sauce.

1. Combine the ginger, garlic, shallots, mushrooms, cabbage, carrot and scallions in a large bowl. Toss to mix; season with salt and pepper, to taste.
2. Place a 1 teaspoon of filling in the center of a wonton wrapper. Wipe each outer edge of the wrapper with a dab of water.Fold the wrapper diagonally over the filling, pressing out any air, to make a triangle. Press the edges firmly together to seal.With the point of the triangle facing you, use your index finger to push the folded side of the triangle down, bringing the two points together over the top. Dip your finger into the water once more, to moisten the two points. Bring the two points together and pinch over the filling to seal. Set on a parchment-lined baking sheet and repeat with remaining wrappers and filling.
3. The wontons freeze remarkably well. Simply lay the wontons on a tray and place them in the freezer for 20 to 30 minutes, to set.Transfer to a freezer bag, and use within three months.

1. Chop the veggies as small as possible or pulse them in a food processor.
2. In a pan, saute carrots, onion, cabbage until soft. Crumble in tofu. Add in the soy sauce or coconut aminos, garlic, ginger and toasted sesame oil (optional). Saute for 10 minutes until completely cooked. Remove from heat.
3. Add about 1-1.5 tsp of the mixture into the center of each wonton wrapper. Fold the wonton wrapper forming a triangle. Seal the edges with water and press down. Take the two ends of the "triangle" and press the edges together. The wonton package should have instructions with images on the back. I made 20 wontons but feel free to make as many as you want.
4. Preheat air-fryer to 350 F. Use non-stick air-fryer or spray with a little cooking spray. Add wontons into the air fryer gently. Don't stack them on top of one-another. Cook for 5 minutes or until golden brown. They burn quickly so watch them!
