1. In a large pot, bring water to a boil over high heat. Now reduce heat to maintain a gentle simmer. Break up nori into 3-4 pieces and add to water. Simmer for 1-2 minutes until it breaks down.
2. Remove from heat and pour broth through a Mesh Strainer into another pot or large heat-safe bowl. Return strained broth to the pot and return to the stovetop over medium heat. Discard nori.
3. Add tofu and green onions. Bring to a gentle simmer for 1-2 minutes to warm tofu throughout. Remove from heat.
4. Place a mesh strainer over the pot and add the miso paste. Dissolve using a spoon or spatula (see note for alternative method) Serve and enjoy!

1. Cook noodles according to package directions and set aside. If using the precooked or fresh noodles, simply add to the soup to warm through.
2. In a medium size pot, add water/broth and miso, gently heat over medium-low, stirring occasionally, until miso has dissolved. If using a seaweed that needs to be soaked, add it with the soup. It will add a nice flavor to the soup base. Remove the seaweed with tongs, slice and place back into the soup. Add tofu and noodles to the pot, continue to cook until warmed through.
3. Using tongs, place noodles in individual bowls. Ladle in the soup broth and tofu cubes. Add the shredded carrots, scallions and nori slivers (if using) over top and give a good stir. Enjoy this simple, healthy and delicious soup!

3. Rehydrate dried wakame seaweed in water for 5 minutes. Squeeze water out and place it in miso soup bowls.
4. A typical Japanese miso soup bowl holds about 200 ml of liquid. Miso varies in saltiness depends on types and brands; but as a general rule, we add 1 tablespoon (20 g) of miso per one miso soup bowl (200 ml dashi). I use miso muddler (one side measures 1 Tbsp, the other side 2 Tbsp). For this recipe, I use roughly 4-5 Tbsp. Tip: When you add tofu, you may want to add an extra tablespoon (that’s why I add 5 Tbsp total) because tofu contains additional moisture which dilutes miso soup.
