2. In a medium-size bowl, prepare the vegan buttermilk. Whisk plant-based milk with apple cider vinegar (or lemon juice) and maple syrup. Set aside.
3. In another small mixing bowl, combine melted coconut oil and mashed banana. Make sure you measure the amount of mashed banana in cups, to be accurate. Some bananas can be larger than others, and too much mashed banana will leave the muffins slightly moist inside. Set aside.
4. In a large mixing bowl, whisk together the flour of your choice (I used white spelt flour), baking soda, and baking powder.

2. In a large bowl, sift together your flour, baking powder, baking soda, and cinnamon. Make a well in the center of these ingredients and then set this bowl aside for a moment.
3. Combine together the milk, eggs, and melted butter. When mixed, pour these wet ingredients into that well you created in your dry ingredients in the first bowl. Then, stir the ingredients together until just mixed together- not over mixed. It is 'okay to have lumps'in your batter.
4. Next gently stir in the sugar alternative. Then fold in the strawberries (I prefer to fold them into the batter rather than stirring them in in order to keep the strawberries intact).
