1. Preheat oven 400F. Drain and rinse your chickpeas and place in mixing bowl.
2. Toss the chickpeas in oil and spices; cumin, salt, garlic, cayenne, and olive oil. Place on baking tray and in the oven to at 400 F for 15 min. Turn chickpeas over halfway through cooking. Remove from oven and set aside. Note – while the chickpeas are roasting, prepare your sweet potato bowl ingredients. Chop onion, peel and chop sweet potatoes, and stewed tomatoes (reserve 2 tbsp of the tomato juice for cooking).
3. Next add 1 tbsp olive oil to a large pan or skillet. Saute the onion, pepper, and garlic until onion starts to caramelize. Around 2 minutes or so on medium high.
4. Add in additional 1 tsp cumin, dried oregano, bay leaves, cinnamon. Cook until fragrant. Another 3-4 minutes on medium high.

1. Heat olive oil over medium-high heat in a large flat-bottomed skillet. Finely chop the onion, press the garlic, and add the two ingredients to the pan. Skate them around the pan with a wooden spoon every now and then to prevent them from burning.
2. While they are cooking, seed and core the red pepper and chop it finely. Add to the pan and stir, cooking until soft. This is your sofrito!
3. Pour about one cup of tap water over the vegetables and cover until boiling.
4. While this is cooking, you can chop up the carrots. I don’t peel the carrots, since the peel has additional nutritional value and it isn’t noticeable once you chop the carrot into a zillion pieces. Chop the ends of the carrot, and slice it in half. Slice the halves in half, and once again, until you have a bunch of long, thin, carrot slices like you would use for dipping. Chop those up finely.
