Mash the bananas. Add sugar, eggs, flour and vanilla. In a large skillet, heat on low flame. When hot, spray with Pam and using a tablespoon, pour 1 tablespoon of batter for each fritter. When cooked on one side (1-2 minutes) flip over and cook the other side. Set aside in a dish and keep warm in the oven as you repeat with the rest of the batter.

1 teaspoon white sugar (make sure it's vegan!) Peel the bananas and cut each banana in about 10 chunks. For the batter, combine the flour, baking powder, and sugar. Add the plant-based milk and sparkling water and whisk together. If you dip a banana chunk into the batter, the batter should stick to the banana.
In order to make the fritters nut free, you will need to replace the almond flour with something – obviously. If all you have on hand is coconut flour, you can use a little more than the recipe calls for. So, omit the almond flour and use 3-4 tablespoons total of coconut flour (the original 2 in the recipe, plus 1-2 more).
