1. In a large bowl, mix the grated apple, apple sauce, coconut oil, honey and vanilla extract.
2. In a separate bowl, mix the almond flour, coconut flour, flaxseed meal, cinnamon, baking soda and salt.
3. Using a rubber spatula, gently mix the wet and dry ingredients together just until combined. Do not over mix.
4. Cover bowl and refrigerate dough for 30 minutes.

1. Preheat oven to 350F. Line a cookie sheet with parchment paper or silicone liner and set aside.
2. Wash and dry apple. Can be peeled or left intact - either way is fine. (I didn't peel mine.)
3. Core apple and cut into chunks. Place chunks in small food processor and process until pureed - stopping and scraping the sides as needed. (Puree should resemble raw apple sauce. You'll need 1/2 cup of it for the recipe.)
4. In a medium bowl, add the almond flour. Stir in 1/2 cup of the pureed apple, cinnamon and salt (if using) until thoroughly mixed.
