Add chopped onion and saute for about 5 minutes or until caramelized. Add mashed garlic and cook 30 seconds. Add all spices (through pepper) and stir into onion mixture for 30 seconds to toast and blend.
3. Add vinegar to hot skillet mixture. Add quince paste and melt into the onion mixture, stirring in thoroughly.
4. When instapot pork is done, open and remove liquid (pork juices and water) from bottom of instapot and add to onion mixture in skillet over med-high heat. Add pork chunks and stir thoroughly, coating pork cubes with onion-spice mixture.

6. While the chiles are soaking, add the chipotle pepper in adobo sauce, onion, 1 cup of diced pineapple, orange juice, vinegar, salt, oregano, garlic, and ground cumin to a large blender.
7. Remove the soaked and softened chiles from the water, shake off any excess liquid and add them to the blender. Blend ingredients until completely combined.
8. In a large resealable plastic bag or a large mixing bowl, add the blended marinade and sliced pork loin. Toss together to coat and marinate for 4-12 hours in the fridge.
