1. To make the tofu, cut a block of tofu into pieces approximately 1/4 inch thick, then cut those into four pieces each (so you have pieces approximately 1" x .5")
2. Arrange the tofu pieces on top of a paper towel (or other clean towel), sprinkle with salt, and put another towel on top. Place something heavy (like a cast iron skillet) on top of it. Allow to sit for approximately 10 minutes so the the moisture is drawn out of the tofu.
3. Place tofu in a medium sized bowl with cornstarch, and salt and pepper to taste. Stir/shake gently to coat the pieces of tofu in cornstarch.
4. Coat the bottom of a heavy skillet (cast iron recommended) with olive oil. Heat over medium-high heat, and add tofu. Allow to sit for 2-4 minutes, or until golden brown. Flip and allow to brown on other side, and remove to a clean paper towel to drain. You will probably need to do two-three batches.

1. Marinate: In a small bowl, toss your tofu, tamari, and sesame oil together. Set aside.
2. Fry: Heat a sauté pan with canola oil on medium to medium-high heat. When oil is hot, toss tofu in cornstarch and add tofu to pan. Allow tofu to pan fry, flipping occasionally, until tofu is medium brown in color; about 10 minutes. Remove from pan and place onto kitchen towel or paper towel to absorb excess oil.
3. Toast: Add butter and shallot oil (or oil and onion) to pan. Once butter is melted (and onion is translucent), add the rice. Allow rice to sit in pan, without moving until some grains have a slight golden color; about 5 minutes. Then, stir to distribute the remaining "butter".
4. Combine: Add the frozen veggies, 2 Tbsp tamari, rice wine vinegar, sesame oil, and black pepper to the pan. Mix everything together, then put the lid on your pan and allow veggies to steam for around 5 minutes. Taste and add additional tamari as needed.
