2. Heat a large skillet over medium-high heat. Add the oil and the onion and fry until onion is fragrant but not fully cooked. Add ground beef and brown well. Stir in taco seasoning and diced tomatoes. Drain fat if necessary. Remove from heat.
3. Stir in 1/2 cup of the cheese and the cilantro, stirring until cheese has melted.
4. Divide ground beef mixture evenly between the prepared tomatoes. Top with remaining cheese.

Cut a slit in each tomato almost all the way down to the bottom, but leave a bit so the tomatoes are still attached. Rotate the tomatoes and cut one or two more slits, depending on the size of the tomato.
2. Warm the taco meat and beans together. Gently push open the “petals” of the tomatoes and stuff the middle of the tomatoes with the taco mixture. Top with shredded cheese and some chopped lettuce. Drizzle with some of the sriracha ranch and then top with a bit of crushed Doritos. Enjoy by using a fork to cut open the tomato “petals”.

Add ground beef, garlic powder, and taco seasoning. Break up meat into smaller pieces using a spoon or spatula. Cook for 8 minutes or until meat is no longer pink. Remove from heat.
2. Place tomatoes stem side down on cutting board. Slice from the bottom (which is now facing up) to make 6 tomato wedges, but do not cut all the way through tomatoes. You should be left with 6 tomato wedges all still attached at the stem side. Repeat for each tomato.
3. Pry open the wedges and sprinkle some salt over each one to enhance the flavor. Fill tomatoes with lettuce, ground beef, cheese, and finally some yogurt or sour cream. Garnish with salsa, black olives, or other toppings as desired.
