1. Preheat a saucepan on medium heat. I like to spray mine with nonstick before I start just to help with the clean up process later on.
2. Add the butter to the saucepan and when it is somewhat melted, add the sugar alternatives (both the granular and the brown alternatives). Stir while this mixture blends together as you do not want it to burn. When it begins to show bubbles (about 4-5 minutes), remove this from the heat.
3. Whisk in the heavy cream and then xanthan gum and the salt.
4. Return the saucepan to the medium heat and when it begins to bubble again, remove it from the heat and stir in the vanilla extract.

1. Combine butter, sweetener, and 1/2 cup of the cream over medium heat. Stir until sweetener is dissolved.
2. Add vanilla. Cook until it is a deep golden brown. As soon as it reached that deep color (right before burning) remove from the heat and immediately add the rest of the heavy cream. (If you are making this ahead use an extra 2 tablespoons). Stir until smooth.
3. Add 1/4 teaspoon of the salt and taste. I prefer my salted caramel slightly salty so I like this with the full 1/2 teaspoon of sea salt. Cool for 10 min before using.

4. Add butter to a small saucepan over medium/low heat and simmer, stirring every so often, until fully browned (about 5 minutes). Add in the sweetener, heavy cream and salt (lower amount, see notes), stirring until fully combined. Add in the molasses (optional), and stir briefly until just combined.
5. Simmer over very low heat for 15 minutes (don't stir at all!), taste for seasoning and pour into a glass container of choice. Your caramel should be sticky and thick, but still totally pourable. Use warm or allow to cool completely, and refrigerate for roughly a week. The caramel will thicken up in the fridge (as does regular dulce de leche), so either bring it back to room temperature or heat it up with a little more heavy cream (or say almond milk!) to thin it out a bit.
6. Note: if your caramel splits (too high temperature is usually the culprit!), you might still be able to save it. Remove it from the heat, allow the mixture to cool down for about 5 minutes, bring it back on the stovetop over low heat, and gently whisk in a tablespoon of water until it comes back together (should happen almost instantly).
