Misoyaki butterfish combines the Japanese flavors of sake and miso. Butterfish which is also known as black cod, deep sea cod, sablefish, gindara and snowfish may be found fresh or sometimes flash frozen. I use the Hawaiian Miso & Soy Company brand soybean paste.
To make the marinade, just combine mirin, sake, and sugar in a saucepan. Bring the mixture to a boil (stir to dissolve the sugar). Turn the heat to low and add the white miso. Use a whisk to help break up the miso so that you get a beautiful, smooth marinade. Simmer for 5-10 minutes until the marinade is a light caramel color.
But in Hawaii, butterfish is a preparation, not a species of fish. What you are looking for is actually miso-marinated black cod. (This is another confusing fish name, since black cod is actually a North Pacific sablefish, named for its dark black skin.) In Hawaii, where it’s hugely popular, this dish is usually called misoyaki butterfish.
