DirectionsStep1Cube chicken into 1 inch pieces. In a large pan heat 1/2 tablespoon of olive oil. Cook chicken for 15 minutes until browned.Step2Once cooked, remove chicken from the pan + set aside.Step3Add in remaining 1/2 tablespoon of olive oil to the pan. Cover the pan then lower heat and simmer for 30-40 minutes or until rice is cooked.
