Place the lid back on top then turn heat down to medium-low (no higher!) and simmer for 10 minutes. Take the pot off the heat then let sit for 5 more minutes, covered, before removing the lid and fluffing with a fork. Taste then add more Cajun seasoning if desired and serve.
