To make your red pepper jelly spicy, just add about 3 teaspoons of red pepper flakes to the mixture. You can even add a few drops of hot sauce too if you still want it to be spicier. How do you make red pepper jelly without pectin? You need the pectin to give it the jelly-like consistency. If you don’t use pectin, it will come out more like a jam.
You can also make this jelly milder by replacing part of the jalapeños with green bell pepper (e.g. 5 jalapeños to 1 medium green bell pepper). Or, for a kid-friendly version, use only green bell peppers. For an elegant variation, replace the vinegar with dry white wine.
You can choose to have pepper pieces in your jelly or not! If you want to have them in there, don't bother straining the juice out. There are two main ways that I make this jelly - as-is, or as “hot red pepper jelly”. The latter involves swapping out most of the green peppers for red (aside from the jalapeno), and upping the number of hot peppers.
