    1. Preheat oven to 375 degrees F. Grease an 8x8 baking pan; set aside.
    2. Peel and dice the potato and dice into small equal sized pieces. Add the diced potatoes to a small saucepan and cover with water. Bring the potatoes to a boil over high heat. As soon as the water comes to a boil, turn off the heat and allow the pot to sit on the burner. Let stand for 5 minutes. Then drain.
    3. Meanwhile, heat the olive oil in a large non-stick pan over medium-high heat. Add the onions, carrots, and celery. Cook until soft and they just begin to brown; about 10 minutes. Add ¾ cup of the chicken broth and the rotisserie seasoning. Simmer until the liquid reduces; about 6 to 8 minutes. Stir in the peas, potatoes, chicken and 4 tablespoons of the cream cheese. Heat until the cream cheese is melted; about 2 more minutes. Remove from the heat.
    4. Spread the filling out into the bottom of the prepared baking pan.

    1. Pre-heat the oven to 355F / 180C.
    2. Pour a kettle of boiling water over the spinach in a colander to wilt it, then squeeze out as much of the water as you can with the back of a spoon (and your hands!). Chop the spinach and put into a bowl.
    3. Add the sundried tomatoes, salad onions, feta (crumbled), parsley, dill and eggs to the spinach and combine well.
    4. Now prepare the pastry. Lightly brush or spray an 8" loose-bottomed baking pan with olive oil, then drape a sheet of filo pastry in the centre of it at an angle, with about half of it hanging over the edge. Repeat with the other 4 sheets of pastry, rotating the pan as you go so that the whole of the bottom of the pan and the sides are covered with pastry. Brush lightly with olive oil between each layer.
