Phyllo is a type of pastry sheet that is rolled out so thin you can read a newspaper through it. It originated in the Eastern Mediterranean and spread throughout Europe, even making its way to Austria where it became the base for the ever-popular strudel.
Using filo pastry means this strudel dessert is lower calorie and suitable for vegans too. The reason why filo pastry is much healthier than puff pastry and suitable for vegans is because it’s made only from flour and water.
