1. Preheat the oven to 425 degrees F. Line a baking sheet with foil.
2. Drain the artichoke hearts in a colander in the sink. If they are not already quartered, carefully quarter them with a knife on a cutting board. Place the artichoke hearts in between two paper towels or clean kitchen towels and gently press to remove excess moisture.
3. Set up a station with two bowls: one with melted butter and one with the parmesan and breadcrumbs mixed together. Place each artichoke heart in the melted butter (roll around to coat) then the breadcrumb mixture (roll around to coat). Arrange the artichoke hearts in single layers on the baking sheet. Roast for 15 to 18 minutes until crunchy and lightly browned.
4. While the artichoke hearts are roasting, whisk together the Greek yogurt, lemon juice, garlic, dill, salt, and pepper in a small bowl. Taste and adjust seasonings as desired. Serve the artichoke hearts with the dip, and enjoy!

1. Drain artichoke hearts well. Set upside down on a paper towel lined plate to allow excess liquid to drain out of all the crannies and crevices, pat exteriors dry. Liquid will spit and sizzle when added to hot oil so you want to get as much off as possible.
2. In a medium frying pan, heat extra virgin olive oil over medium heat. Add artichoke hearts. Rotate or turn every minute for approximately 4 minutes or until the majority of surface area has a nice light brown coloring.
3. Remove to a paper towel lined plate to soak up the excess oil. Season with a few twirls of freshly ground peppercorns and a few shakes of course seas salt.
