Spinach & Cheese Strata. Layer a third of the bread in a buttered 3-quart baking dish. Top with a third of the spinach. Followed by a third of each cheese. Repeat layering twice, ending with the cheese. Make the custard by combining the eggs, half-and-half-Dijon mustard salt, pepper and nutmeg. Pour evenly over top of the strata.
Arrange half the bread in a buttered 2 1/2 quart baking dish or 8x8 pan. Drizzle half the melted butter over the bread. If adding veggies or meat layer those on next. Cover with the shredded cheese. Top with remaining bread and drizzle remaining butter over. In a small bowl, beat the milk, eggs and seasonings.
Remove the dish from the oven and let it stand for about 10 minutes. Use a serrated knife to cut the strata into 12 portions for a hearty meal. Or cut it into 24 pieces for appetizer portions. It's really good with a dash of hot sauce too!
