1. Before you starts, keep in mind that this is a yeast free, oil free naan. It means that the texture won't be as soft and fluffy as the classic recipe. It is a much more dense, and chewy bread by a delicious vegan naan option for curry
2. In a large mixing bowl stir flour, baking powder, and salt make a well in the center of the flour and stir in the non-dairy yogurt.
3. Mix with a spatula then get your hands in the dough to knead for a few seconds until the dough is combined and slightly sticky dough form. Add 1-4 extra tablespoons of flour if needed until the dough is soft, not sticky and you can form a ball.

1. In a small bowl, combine the yeast, sugar and water. Stir to dissolve sugar and set aside for a few minutes until it's foamy on top. Then stir in oil, yogurt, and the beaten egg until evenly combined.
2. In a medium bowl add 1 cup of flour and baking powder, whisk to combine. Add the bowl of wet ingredients to the flour mix and mix. Continue adding flour a half cup at a time until you can no longer stir it with spatula.
3. Turn the ball of dough out onto a well floured surface and knead the ball of dough for about 3 minutes, add flour when necessary to keep the dough from sticking (I ended up using about 3 cups of flour total). The dough should be smooth and soft but not sticky.
4. Place dough back in the bowel and loosely cover the dough with a slightly damp clean kitchen towel or top with plastic wrap. Let it rise for about 45 minutes or until about doubled in size.

1. In a stand mixer with the dough hook attachment, add in the yeast, warm water, and coconut sugar and allow to sit 10 minutes. It should form a clouded, brown colored ring at the top of water.
2. Add in the flour, coconut milk, baking powder, baking soda and salt and mix for 1-2 minutes with dough hook attachment or until it forms a sticky ball (see photo for reference).
3. Cover the mixing bowl with a plate or a piece of saran wrap and allow to double in size in a warm place. If your house is cold and you have an Instant Pot, I recommend moving the dough into the Instant Pot and covering with a plate. Turn on yogurt setting and allow it to proof in there! It's the perfect warm spot to allow dough to rise.
4. Once dough has doubled in size, turn dough out onto lightly floured work surface and form into a nice round ball. Cut into 4 even pieces.
