1. To make this yummy dessert recipe at home, take a griddle and dry roast puffed rice over a low flame until it turns crisp. Keep it aside.
2. Heat ghee in a large deep-bottomed frying pan (kadhai) and add jaggery to it. Keeping the flame on low, wait till the jaggery melts by stirring continuously. After the jaggery melts and combined with ghee, the mixture will turn frothy. To check the consistency of the jaggery syrup, drop jaggery syrup into the bowl full of water. If the consistency is correct, the syrup drop will form a smooth and soft ball. Otherwise, boil the syrup for a couple of minutes and check again. After you get a perfect consistency, turn off the flame.
3. Now add dry roasted puffed rice to the jaggery syrup and stir through nicely, or until the puffed rice is completely coated with jaggery syrup. Grease your hands with ghee or oil and pull out the portion from the laddoo mixture and start making laddus with your palms. While you are making laddoos, make sure the mixture is still warm. You are all set to enjoy this sweet delight.
