2. Once the 2 kernels pop, turn off the heat, remove the pot from the burner and pour in the remaining popcorn kernels.
3. Cover the pot again, and give the pot a little shake to evenly layer the kernels. Let the pot rest for 1 minute to lightly cool the oil. Then turn the heat back up to medium heat and put the pot back onto the burner.
4. Cook the popcorn, gently shaking it back and forth to cook the kernels evenly. Once the kernels start popping, vent the lid slightly to release steam.

1. Place 1 tablespoon coconut oil into a deep pot or pan with a tight-fitting lid and melt over medium-high heat. Add in popcorn kernels and cover. Shake the pan back and forth every 20 seconds or so to heat kernels evenly. After about 2 minutes, kernels should start to pop. Once popping slows, remove popcorn from heat and pour into a large bowl.
2. In a small saucepan, place remaining coconut oil with maple syrup and salt. Boil 2 minutes, then remove from heat and stir in vanilla. Drizzle over popcorn and toss to coat evenly. Spread out onto some parchment paper to cool 30 minutes or so. Serve.
